Breakfast Baked Oatmeal

Well I couldn't get the pictures to post so I'm giving you a link to my Picasa Album :)

I'm so sorry I haven't been around lately...its been a BUSY week! Anyhow, I thought you'd like this recipe. Its one of my favorites but I haven't made it up for a few years. So I made me a batch yesterday for my breakfast...Man was it ever SOOOOO Goooood!

Breakfast Baked Oatmeal
1/2 c. melted butter (or margarine)
1 c. milk
1 tsp vanilla
1 tsp salt
2 eggs
1 1/2 tsp baking powder
1 c. brown sugar
1/2 tsp cinnamon ( I used 1 tsp)
3 c. Oatmeal (I used quick cooking oats)

Mix together and cook at 350 deg. for 45 minutes.

You can also add: apple bits, raisins, dried fruits (any), coconut, chopped nuts, chocolate chips etc. This serves 10. It can also be frozen in single serving sizes if you wish.

For me: I added 1 cup coconut, 1 cup choc chips, 2 cups dried cranberries and 1 cup walnuts chopped. Yummies!

  1. This sounds wonderful. I'll have to print it and give it a try sometime soon.

Sorry it is taking you so long to get your Giveaway package. I couldn't afford to send 5 packages Priorty Mail! I didn't think about that when I decided to have five winners. Hopefully, you'll get it next week sometime. I'm not sure how long Media Mail takes. :/
